Chess Pie

This is not a pretty pie. Nor is it a fancy one. But if you want yummy, sunny, Southern comfort in a pie crust, then you want to try out this super easy recipe courtesy of my Aunt-in-Law. My DH has been raving about it since supper last night (he's the culprit of the missing slices) and I can't get over how quickly I was able to throw it together!

Chess Pie

1 stick of butter, softened
2 eggs
1 cup of sugar
1 tbs corn meal
1 tsp vanilla 
1 unbaked pie crust

Preheat your oven to 300 degrees. Combine first five ingredients; blend until smooth. Pour into pie crust and bake for 45 min. or until slightly firm. Allow to cool, then serve and enjoy!

Ooh yum! I am so excited to see that it does not call for flour!! I am going to try making it crustless tomorrow, or see if I have the ingredients for a gluten free crust!
