no bake cookies (1)

Today I have for you a simple no-bake cookie recipe made with almond butter and carob. These are truly packed full of foods that your body can use. Throw a couple in your lunch, car, or workout bag, and you have yourself a healthy snack that will get you through until the next meal.

I personally love to have these as alternative to dessert. It’s just enough to kick that sugar and chocolate craving so that you don’t find yourself eating a whole chocolate bar laden in corn syrup and other gunk. Yes, these are on the healthier side. If you are looking to bite into something that tastes like a super sweet Hershey’s candy bar, then this may not be for you.

Strawberry Shortcake with Lemon cream cheese muffins

Strawberry shortcake with lemon cream cheese muffins

It is that time of year when strawberries are on sale. After seeing organic strawberries on sale, I decided it was a shortcake day. We all know that organic strawberries can break the bank most of the time, so when they are on sale, I jump!

Who doesn’t like strawberry shortcake! It’s the best!

I know organic eating can be expensive. We don’t eat completely organic, but I do my best to support organic when I can, which is most of the time. Strawberries are one of the foods you want buy organic as often as possible to avoid toxins.

All I can say, is these Muffins taste similar to a scone, but are softer. They are the perfect consistency for strawberry shortcake, with the yummy taste of a scone. You can even eat them plain, they are way to delicious with out the berries and whip too!

Growing up this was a staple in our home when it comes to dessert. This is one of my all time favorites. I never tire of it. I don’t recommend making it when you are the only one home, unless you plan on eating the whole batch!

The cream cheese added to the muffins and whip cream in just enough to make your taste buds dance a little, while finishing off with some lemon zest, and almonds for a bit of a crunch! In this recipe, I used a bit of coconut flour, and of course, my new found love coconut sugar!

Cranberry, walnut, oatmeal cookies

Cranberry walnut cookies

You will love this yummy cookie loaded with oats, cranberries, and walnuts!

This is the time of year that I like to put on my jammies, hunker down with my family, and enjoy some baking. There is something about a cold winters day that without fail, calls for some delicious home baked goods. Baking, eating cookies, and watching an old classic movie is one of my fondest memories as child. Here I am keeping the tradition alive! I generally make oatmeal chocolate chip and sugar cookies. However, this year I wanted to try something new.

I certainly couldn’t give up my walnut and oatmeal combo, so I decided to throw in some cranberries in place of the chocolate chips. They were a hit! They were all eaten before the other cookies. The best part is, it’s a simple recipe that we have all made many times.

All you need to do is chop up some dried cranberries and add them to your cookie dough. If you don’t have a good oatmeal chocolate chip cookie recipe then check this one out below. You can make cranberry oatmeal cookies or chocolate chip oatmeal cookies. I hope you enjoy them as much as I do!
