Healthy homemade banana pancakes…3 ingredients! 

Ok, so your kids want to eat pancakes, but as a mamma bear looking out for there health; you might not be to keen on the options at the grocery stores. If that’s you, don’t worry. This healthy homemade banana pancake recipe will save the day! 

It’s a win, win! They can banana pancakes, and you get eggs, oats and banana in them. Whoop, whoop! These simple to make & packed full of all the stuff your kiddos need to thrive. If you want you can even choose to forgo the oatmeal. I have also made these with cottage cheese, by trading out the cup of oats for a 1/2 cup of cottage cheese.

If you littles like blueberries, you can add a few of those too! They taste great on there own. The banana really adds the sweetness. Or, you can eat them with almond or peanut butter. Occasionally I put a little maple syrup on them as well. 

Here you have it. There are many ways you can serve this recipe to your kids as well as mix things up so they don’t get bored!

Ingredients:

  • 1 banana
  • 3 organic eggs
  • 1 cup whole oats
  • Coconut oil

Instructions:

  1. Add all ingredients in the blender, and blend until completely smooth.
  2. Place pan on medium-low heat.
  3. Add a Tbsp. of coconut oil.
  4. Pour your batter ( I like to add fresh blueberries to the pancake before I flip, especially if they are frozen).
  5. Cook on low for 1 minute for so and the flip it and do the same on the other side.

This should make 8-10 small pancakes ( kids size). I hope you you enjoy this yummy recipe I stole from my really healthy big brother!

Pupusas, a Salvadorian delight!

Pupusas

Pupusas are oh so yummy! This is one of my favorite authentic comfort foods. If they are anywhere near me. I will eat them breakfast, lunch, and dinner.  

The Pupusa is El Salvadors national dish, very similar to the Mexican gordita, and South American Arepa. Pupusas are traditionally served with curtido (a pickled cabbage relish similar to a freshly made sauerkraut) and a homemade tomato sauce.

A pupusa is made with Masa, which is a corn flour that is very thick, and is usually filled with a blend of the following:

  • Cheese ( Queso fresco, a fresh and very mild cheese)
  • Seasoned pork meat ground to a paste consistency (called chicharrón)
  • Refried Beans

Today I am going to share with you a delicious family recipe that might be a little different from the traditional pupusa, but still very much an El Salvadorian pupusa. I will also throw in some helpful tips and tricks on how to make your pupusas. It’s all about the Masa. If you have a good consistency, and perfect the art, it will be smooth sailing. 

First we will start off with making the Curtido.

Curtido

Curtido Ingrediants:

  • 5 cups of cabbage thinly shredded
  • 1 red onion thinly sliced
  • 1 1/2 cups of thinly sliced carrots (I like to use a mandoline slicer)
  • 1/4 cup of dried red chilies 
  • 3/4  cup apple cider vinegar
  • 4 tsp. sea salt
  • 1 tsp. oregano
  • 1 cup of water (warm water, this slightly cooks the cabbage making it softer)

How to make it:

Add all ingredients in  large bowl, massage with your hands, add your warm water and let it sit for a few hours before you serve it.

Second, we will make the Red Salsa packed full of flavor.

Salsa Rojo

Salsa Rojo (Red tomato sauce) ingredients:

  • 3 medium tomatoes
  • 1/2 small white onion
  • 2 garlic cloves
  • 1/2 bundle of cilantro
  • 1 small jalapeño pepper
  • 1 tsp. dried oregano
  • 2 tsp. salt
  •  ¾ cup water

How to make:

Add all ingredients in a blender, blend until very smooth. You don’t want it chunky, but completely blended. Add blended ingredients to a pan, bring to a boil, let simmer for about 10 minutes. Ready to serve when cooled to room temperature or warm.

Bean and cheese ingredients:

  • 3/4 cups black refried beans
  • 3/4 cups mozzarella cheese (graded)
  • 5 0z. Queso fresco 
  • 1/3 cup sour cream

How to make:

Add all ingredients together and mix well.

Now for the fun stuff, let’s make Pupusas!

Preparing the Masa:

  1. Mix 4 cups of the corn Masa flour ( Maseca) in a bowl and and add 2 1/2 cups of water. 
  2. Add 1/4 cup olive oil.
  3. Add 1 Tbsp. Sea Salt ( may need more depending on you). I usually add a pinch more!

Mix well with your hands and let it set for 5 minutes. Cover with a wet paper towel to keep the masa moist. It should be a little sticky, but still pliable. Here is an example of what it should look like: masa

2. Take 1/4 to 1/3 cup of masa and begin to make a pancake shape about 4-6 inches.

3. Add the bean and cheese filling (As seen in the above photo).

4. close the masa flour around the bean and cheese filling making a ball. Then begin to flatten like a pancake once again.

Helpful tips:

Cut a large zip lock bag down the sides, leaving the bottom sealed. Place zip lock bag on a large plate. Place your ball/pancake with filling in the middle in between the zip lock, enclose in the zip lock, then press down with even pressure with another plate. This is what you get, the image below. A beautiful pupusa!

It’s also helpful to have a dish water and olive oil handy so you can add water and oil to the masa flour if needed to make it more pliable.

5. Heat frying pan to medium heat. Add small amount of olive or coconut oil, cook pupusa on each side for about 5-6 minutes. Once it’s done start on your next. You will be a pro in no time!

6. Serve hot of the grill, top with Salsa Rojo, and Curtido!

Chimichurri Pasta for Garlic Lovers!

All you garlic lovers, this Chimichurri Pasta dish is for you! First off, I should give you a little History on Chimichurri. It is a fresh marinade made for grilled meat. This finely chopped green sauce made up of, garlic, Italian parsley, lemon, olive oil, and vinegar is originally from Argentina.

Like myself, Argentine people love their food! Eating together around the dinner table and sharing a meal is a very special time in this country. Many gatherings with friends and family are shared around the dinner table and represent friendship and warmth. In honor of this incredibly amazing sauce that makes a dinner come alive, perhaps you should invite some special people over to share it with!

Chimichurri

Now that I have shared the facts with you, I will let you in on why I love Chimichurri and share this simple pasta recipe with you!

I love to add chimichurri to grilled meat, pasta, tacos, and anything else I can think of during flu season. Why, you ask? Well, garlic, lemon, and Parsley are great immune boosters. And we all need stronger immunity this time of year!

 

There you have it, Chimichurri is a delicious green sauce we should all add to our diet. It tastes amazing, and is full of health benefits. Keep your family healthy and strong this winter by being creative with this superb Argentine combo of fresh foods. 

Just be sure that your date or significant other eats it too! Or you may be a loner for the evening! 😉

How to make this dish:

  • Finley chop 6 cloves of garlic, one bunch of Italian parsley, and use the juice of 1/2 a lemon. Cover chopped ingredients with olive oil. I would say 1/2 cup to 3/4 cup of olive oil. Add a tablespoon of balsamic vinegar. Apple cider is a great vinegar if you want to be extra healthy. Mix together and add a pinch of sea salt and pepper. 

 

  • Boil pasta, linguine is the best! I use spaghetti sometimes too. I add a table spoon of olive oil to the water so pasta doesn’t stick together. Once the pasta is done, add a couple tablespoons of chimichurri to your cooked pasta, and top with a generous amount of Parmesan cheese! Yum! 

 

  • It is that simple! The hardest part is chopping the garlic finely. Once you have done that, you are in business. A healthier way to eat pasta and it’s a fast, yummy, immune boosting meal for your family. Enjoy!

  1. 6 Cloves of garlic

Homemade Chicken Soup

It’s that time of year when we spend more hours indoors and those yucky germs can get the best of us. This is my all time favorite soup when I am feeling under the weather. As much as I would like to claim this as my own. It’s not. My mother-in-law is truly an amazing cook. This is just one of the dishes that I had to learn how to make. And I’m pretty sure that my hubby is happy about that too! He loves this soup! 

This is a very healthy soup with lots of broth. I did make this recipe easy on myself by changing a few things. Rather than putting a whole uncooked chicken in the pot of soup. I purchased an already cooked chicken pulled apart, and then placed it in the soup. This saves a mess, and time. It literally allows you to make this soup in minutes. I get the rice cooking, as it takes the longest. Chop up the veggies, let them cook, and you are done! 

We like it the Spanish style! But you choose what your family will like the best!

Chicken Soup

By adding some chopped white onion, chopped cilantro, some lemon juice, and Tapitio, it adds a whole new flare! This will rock your chicken soup world by adding a whole new twist of flavor!

Ingredients
  1. 64oz. Chicken broth
  2. 1/2 Cup white rice
  3. 3 Carrots peeled and quartered
  4. 3 Celery sticks halved and then quartered
  5. 4 Small potatoes quartered
  6. 2 Garlic cloves halved
  7. 1 Whole cooked chicken
  8. Sea salt to taste
Instructions
  1. Place broth in pot, and your rice and let it boil while you chop veggies. Next pull chicken apart, and place in broth. Last add your veggies. Should take just a few minutes for rice and veggies to cook.
Notes
  1. Add chopped white onion, lemon juice, chopped cilantro, and Tapitio hot sauce for a little authentic Spanish flare!

For you “spicy food” lovers like me, add half of a diced jalapeno! YUM!

Growing up we ate lots of veggie burgers, and let me tell you my mom can make the best! We really didn’t eat much  meat other than fish. Most of what I like to eat is veggie based. I do eat more meat now, but still love my veggie foods. Here is a twist on her homemade burgers from childhood. I hope you enjoy this new creation of mine! This is a hybrid of my mom’s veggie burger. I threw in a few extras! I will be sure to post my mom’s recipe sometime in the near future for ya’ll!

Ingredients
  1. 2/3 Cups of Black Beans
  2. 2/3 Cups of Cooked Oats
  3. 1 Garlic Clove
  4. 1 Pinch of Cumin
  5. 1 Medium Sweet Potato, cooked
  6. 3 Eggs
  7. 2 Tbsp. Pecans
  8. 1/2 Medium Red Onion, chopped
  9. 1/3 Cup of Corn
  10. 1 Tbsp. No Salt Seasoning
  11. 1 Tbsp. Taco Seasoning
  12. 1 Tsp. Sea Salt
  13. If you like spicy, add 1/2 Jalapeno diced to the batch!
Instructions
  1. All ingredients should be cooked, place in bowl, add seasoning, mix together with your hands, form patty and cook in a fair amount of coconut oil on low heat. Flip carefully with large spatula. Adding cheese does help them stay together better!
