Homemade Spicy Cowboy Caviar, a party hit!

This is a meal in its self. It is so hardy and a great party hit! Recently, a friend of mine made this as a delicious treat before dinner while camping, and let me tell you, it hit the spot! Since then, I have made this Cowboy Caviar several times, but added some spice to it! Making it, Spicy cowboy caviar!

This is an easy and fast dish to make, and great amount for a party. Also, you can totally cut this recipe in half if  you are making it for yourself or even two people.

The main thing to remember when making this dish, is to add the avocados last. Avocados are delicate and get messy quick. 

Here we go! Let’s make us some Cowboy Caviar!

You will need:

  • 1/4 cup of red salsa/ Pace
  • 2 Tbsp. olive oil
  • 3 cloves of garlic
  • 1/2 tsp. cumin
  • 16 oz. can of sweet corn/ or frozen & thawed
  • 16 oz. can of black eyed peas/ you can also use black beans
  • 1 pint cherry tomatoes
  • 1 medium size red onion
  • 1/2 a bundle of cilantro
  • 2 Serranos
  • 3 avocados cut into thick chunks
  • 1 lime juiced
  • Salt & pepper to taste! It usually take a fair amount of salt. You can also add a Tbsp. of honey if you want a bit of sweetness.

How to make it:

1. Chop the red onion, serranos, avocados (thick chunks), & cilantro.

2. Half or quarter the cherry tomatoes.

3. Add everything into a large bowl except the avocado and garlic.

4. Use a garlic press for the 3 cloves of garlic, mix all ingredients well.

5. Lastly, gently add the avocado and evenly distribute.

Hummus recipe with apple cider vinegar

If you are looking for another yummy side dish that you can make yourself, give this a whirl! Homemade hummus tastes better and you avoid all those extra additives our bodies don’t need. This is a super simple recipe like all my others. Cuz, I like simple! What mamma doesn’t? Right!

The apple cider vinegar adds a delicious tang to this homemade hummus as well as additional digestive support! 

Apple cider vinegar is an excellent vinegar to use when cooking due to it’s many health benefits! I recommend that you use it in place of other vinegar as much as possible.

All right so below I will share the ingredients, and “how to” of course. Quickly note, I rinse my garbanzo beans of very well with water and then add in more water. So you can start with prepping those beans! Hummus is great with veggies, on sandwiches, chips, and more….


  • 1 can garbanzo beans (16oz.)
  • 1-2 cloves of garlic
  • 1/2 lemon juiced
  • 1/4 cup water ( may need to add more depending on blender type).
  • 3 Tbsp. Tahinni
  • 1 tsp. no-salt seasoning
  • 1 tsp. cumin
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. olive oil
  • Salt to taste, I personally use about tsp. sea salt


  1. Rinse beans in water thoroughly, strain, and then place in blender.
  2. Add all other ingredients.
  3. blend on high for 3 minutes, you may need to push ingredients down in blender several times depending on the blender type. Also, you may need to add up to 1/4 cup extra water to get it to blend up well.

Why should you add this yummy grain to your diet?

Quinoa as we know it, has become a “trendy super-food” over the last few years. We see it filling the shelves of health food stores across the nation. This yummy side dish is packed full of amino acids, minerals, vitamins, and is high in antioxidants. It contains a good amount of all that our bodies need to be healthy and strong 🙂 It is one of the view plant based foods that is a complete protein. It is gluten free and easy for our bodies to break down. Quinoa is an excellent alternative to rice due its low glycemic index. Anyone diabetic, it will benefit greatly! Or, if you are looking to keep sugars out of your diet, swap a carb out and replace it with quinoa!

There are three kinds of Quiona: white, red, and black. This dish is made with red quinoa, but they are all delicious!

Some Fun Facts! Where does quinoa come from? Its origin is Peru, Bolivia, Ecuador, and Columbia. This plant was first domesticated by the Andean people several thousand years ago. It was referred to as the “mother of all grains, ” a sacred grain to the Incas until the Spanish Conquest. During this time the Conquistadors suppressed its cultivation and forced the Incas to grow grain instead. 🙁 Bad idea!

This has become a loved dish here at home! It is excellent with eggs, beans, tacos, fish, and chicken. For those veggie lovers, it makes a great veggie burger! ( Stay tuned for that recipe in the future). Below is an example of how we like to serve it!

We like to eat it with beans, fresh homemade pico, sour cream, avocado, and some non-gmo chips!

This is a yummy side dish, a little spicy, and great with beans, eggs, tacos, salads, and meats!

  1. 1 1/2 Cups of Quinoa
  2. 1 Cup of cherry tomatoes, cut in half
  3. 1/4 Cup white onion chopped
  4. 1/2 Salsa/ Fresh is best
  5. 1 Tbsp. Butter
  6. 1 Tbsp. Taco seasoning
  7. 1 Tsp. Sea Salt
  8. 1 1/2 Cups of water
  1. Brown the Quinoa on low in pan. Add butter, salsa, sea salt, taco seasoning to pan. Add cherry tomatoes, onion, and 1 1/2 Cups of water. Stir, while bringing to a boil, and then let it cook for 20 mins. on low heat.
